Quick and Easy Indian Food ala Box?

So I spent the better part of the evening playing with beads and chain and making a necklace. One of my random hobbies includes pretending to be crafty (it doesn't always work out in my favor!), tonight I actually seem to have made a neat looking necklace (photo below)....














but it didn't leave much time for cooking so I raided my pantry and found a Coconut Curry (with rice and spiced chickpeas) boxed mix and a Butter Chicken mix.














I know what you're thinking, Indian food from a box, you've lost your mind! But really it was pretty tasty, and on top of that a nice quick weeknight meal. Anyway, figured I'd pass along the info on it because it wasn't half bad!

I love pretending to be crafty myself! With jewelry making, I can actually complete something which leaves me with a feeling of accomplishment. Thanks for the recommendation of the Indian food.

I love that necklace. I really think the silver pieces which resemble coral are great. All in all a perfect necklace for the beach....I might have to throw something in which might go with it! Hmmm. Is it bad that I am already plotting to borrow it? ha! Indian Food from a box, I am all about the easy but would have to see it first hand & taste yours of course!

Joie - I think that's what I enjoy about jewelry making, having a finished product is very rewarding!

On busy weekdays I find myself in need of a quick and easy meal like this - sounds good and I will look for this to try.

I love the fact that markets now offer a more variety of ethnic 'quick' meals for us...I could use the spice to clear out the pipes right now!

I also am crafty, and should give away some of my pieces I have in a box just sitting, all lonely :(

Technology is our friend... the stuff you can get out of boxes has really improved lately! I'm glad your dinner came out well. Besides, your necklace was the work of art for the day! :) K

I like your necklace! Your Mom is right, it would be so pretty for the beach. I make jewelry, too. I've never had Indian food from a box, but I totally trust your taste!

Lovely necklace! As for ethnic cuisine in a box, I'm all for it! The butter chicken packet is a brand I've used before and will continue to do so.

5 Star - this was so easy, and the funny thing is the big green box is Archer Farms brand, from Target, who knew I could find good box food at Target!
Chef E - I know how hard it can be to find time to use the creative side but knowing how creative you are I would say don't give it away - use it!
